Preparation:

  1. Add Phase A into the main container and maintain continuous stirring.
  2. Prepare Phase B premix. While stirring, add Phase B to Phase A. Continue stirring until the mixture becomes homogeneous and clear.
  3. In a separate container, prepare Phase C. Mix and heat to 60°C, then cool to 50°C before adding it to the gel. Adjust the stirring speed depending on the desired flake size (higher speed produces smaller flakes). For easier processing and faster crystallization of the flakes, maintain the gel temperature at 15 - ­17 °C.
  4. Adjust pH between 4.8 - 5.2, adding extra citric acid if necessary
