Preparation:

  1. Prepare Phase A.
  2. Transfer content to the bowl, and heat to 40°C under stirring.
  3. Add B in small portions, avoiding dusting.
  4. Mix slowly in mixer with a planetary mixing whip, creating a creamy texture.
  5. After adding all of phase B, set whipping machine on highest speed untill it reachs ”overrun”.
  6. In the meanwhile, prepare the phase C blend and heat to 80°C. Then under stirring, cool it down to 42-­45°C and add phase D.
  7. Add phase C+D to A+B and continue whipping for 2-­3 minutes.
  8. Fill the jars or other containers with the meringue, using a piping bag, or similar, and leave to set for at least 24 hours at room temperature.
