Preparation:
Heat phase A to 75°C under 2500rpm foam. At this temperature, stir under the same conditions for 15 minutes.Add the ingredients of B under 500rpm emulsifier for 5 minutes.Then add mixture C under 1500rpm emulsifier for 10 minutes.Finally, before emulsifying, add D under 1500rpm emulsifier for 5 minutes.Heat phase E to 75° and add F just before emulsifying, homogenising with a deflocculator if necessary.Emulsion : Emulsify phase EF in phase ABCD under 2500rpm emulsifier for 10 minutes. Then add G under a 2500rpm emulsifier for 5 minutes.Cool to 40° with gentle agitation (paddles) and add the ingredients of H one by one. Maintain stirring for 15 minutes until completely homogenised.
Notes:
Properties: Luxurious powdery pink cream, pH = 5.8 +/- 0.3, Stable for one month at room temperature, 45°C, 55°C, cycles, and 4°C with a slight decrease in pH at 55° (<0.4)
