Preparation:

Heat phase A to 75°C under 2500rpm emulsifier. At this temperature, stir under the same conditions for 15 minutes.Add the ingredients of B under 500rpm emulsifier for 5 minutes.Then add mixture C at 1500rpm for 10 minutes.Heat phase D to 75° and add F just before emulsifying, homogenising under a deflocculator.Emulsify phase DE in phase ABC under 2500rpm emulsifier for 10 minutes.Then add F under a 2500rpm emulsifier for 5 minutes.Cool to 35-40° with gentle agitation (paddles) and add the ingredients of G one by one. Maintain stirring for 15 minutes until completely homogenized Properties: Semi-thick brown cream, pH = 5.8, Stable for one month at room temperature, 45°C, 55°C, cycles, and 4°C, but with a significant decrease in pH at 55°C (pH = 5.05) and acceptable at 45°C (pH = 5.25) and cycles (pH = 5.4).
