Preparation:
Procedure
- Heat sequence # 1 to 78-80°C with propeller mixing.
- Add sequence # 2 to sequence # 1 and begin cooling.
- Add sequence # 3 ingredients to batch in order of addition.
- Add sequence # 4 to batch.
- Cool to 35°C and add sequence # 5 to batch.
- Cool to room temperature and add sequence # 6 to batch.
