Preparation:
- Begin heating the water to 65-70ºC while mixing.
- Add ingredients of phase A individually, while mixing slowly ensuring homogeneity after each addition. Add ingredients of phase B
- Continue mixing and begin cooling batch to 38-40ºC.
- Premix yogurt powder with water and add to main batch. Add remaining ingredients of phase C individually while mixing. Continue mixing until batch is uniform.
