Preparation:
• Phase A‐ Mix Xanthan Gum in to Water‐ Homogenize. • Combine ingredients of Phase A, heat mixture to 70C • Combine ingredients of Phase B, heat mixture to 70C Under high shear mixing, add phase B into Phase A and mix(~3000rpm) until completely emulsified. • Cool down under moderate agitation and add Phase C at 35C. • Cool down to 30C.
