Preparation:

  1. Weigh the water and start heating up to 70°C. Sprinkle Sucraclear under stirring (around 300 rpm) and continue to obtain a smooth, homogeneous and transparent gel.
  2. Cool the gel to 35°C and add one by one the elements of phase B under moderate stirring. Continue stirring for 10 minutes.
  3. Phase C: Add Sodium Benzoate in water under stirring for 10 minutes until completely dissolved. Add phase C to the mixture.
  4. Phase D: Add one by one the elements of phase D under stirring and continue for 45 minutes. The phase must be transparent and homogeneous. Introduce it to the mixture.
  5. Measure the pH and add the citric acid solution to obtain a pH between 5.2 and 5.5.
